What is the deal with the heavyweights?

Attempting to do my best Jerry Seinfeld impersonation, "What is the deal with the heavyweights, one loses one wins, I mean come on! There like two whales flopping into each other. " I know it is a pretty bad impersonation (guess my stand up career is over), but seriously what is the deal with the heavyweights?
At UFC 90 the unknown Junior Dos Santos knocked out Fabricio Werdum, a top-ten heavyweight. It was Santos' debut fight in the UFC. This wasn't the first time a relatively unknown heavyweight defeated a highly touted one. Gabriel Gonzaga knocked out Mirko 'Cro Cop' Filipovic, an event that turned the heavyweight division upside down. Then Gonzaga lost two fights in a row sending him back down the heavyweight ladder. While Werdum is no 'Cro Cop', there are still a lot of similarities between the two. Both were successful Pride veterans, both were ranked high at the time, both were positioning for a title fight and both got knocked the fuck out.
The most recent upset was cited by some as evidence that the UFC has a deep heavyweight division just not clearly defined. I totally disagree. Yes there is parity, but it is parity of mediocrity not excellence. Besides Antonio Rodrigo Nogueira and Randy Couture (still reserving judgment on Brock Lesnar) the UFC heavyweight division is filled with inconsistent fighters; Cheick Kongo, Gabriel Gonzaga, Heath Herring, Cain Velasquez, Shane Carwin, Jake O'Brien and now Junior Dos Santos.
Besides the two marquee heavyweight fights in November and December, there are no future match-ups that jump out and scream "please god let this fight happen". A problem compounded when one considers that Affliction has three of the top four heavyweights.
